Why We Love This Pecan Pie Cobbler Recipe

Pecan pie is one of our favorite Thanksgiving staples. After all, it’s nutty, sweet, and warms you from the inside out. Nothing says the holiday season is here quite like a warm bite of pie. So, turning it into an easy-to-make cobbler recipe that can be enjoyed all year seemed like a no-brainer! Unlike the time-consuming, detail-oriented process of making a pie from scratch, this pecan cobbler requires minimal prep and very little cleanup. Soon to be a family favorite, it’s:

  • Made in one dish.
  • Fully baked in 35 minutes.
  • Bursting with a gooey butter filling.
  • Topped with nuts and toffee bits for the perfect crunch.
  • Guaranteed to have your guests begging for more!

Ingredients You’ll Need

Not your typical cobbler recipe, our version uses a secret ingredient for the easiest, most failproof dessert you’ll ever make. Take a look at everything you’ll need below.

  • Pancake Mix – Not what you might expect to see in a pecan cobbler recipe, utilizing pancake mix is our secret weapon to baking the fluffiest treats with minimal work. It makes for a great flour substitute and adds just a little extra flavor.
  • Brown Sugar – Using brown sugar allows for an ultra-rich, caramel-like flavor without the need for corn syrup as found in many pecan pie recipes!
  • Baking Powder – This makes for the fluffiest cobbler.
  • Cinnamon – We love a dash of cinnamon for just a little extra hint of sweetness.
  • Vanilla Extract – This takes your pecan cobbler to the next level!
  • Whole Milk – We found that using whole milk in place of lower-fat milk makes a world of difference when it comes to creating a decadent taste.
  • Butter – Added to the bottom of the baking dish, butter makes for the richest, softest, most irresistible dessert.
  • Pecan – You can’t have pecan pie cobbler without the pecans! They’re added to the batter and sprinkled on top.
  • Toffee Bits – These help add a little extra crunch for a truly unique treat.
  • Hot Water – This locks in moisture without altering the flavor of the recipe.

How Do I Keep My Pecan Cobbler from Seeping?

You don’t! That’s what makes this recipe so delicious. Once flattened in the baking dish, the batter will cause the butter to flow out the sides and spread on top. Don’t worry, this is what creates the soft, gooey center you’re going to absolutely adore.

Serving Suggestions

Of course, you can serve this pecan pie cobbler straight from the baking dish. However, when preparing it for guests, we like to get a little fancy with these serving suggestions instead:

Scoop Portions into Mugs. This makes for fun handheld desserts that are easy to hold and perfect for taking on the go.

Use Wine Glasses. For an Instagram-worthy presentation, scoop the pecan cobbler into your favorite stemmed wine glasses, and add a dollop of whipped cream on top.

Don’t Forget the Ice Cream! There’s nothing better than warm pecan cobbler topped with cold scoops of indulgent vanilla bean ice cream.

Make Ahead Options

Should I keep my pecan cobbler refrigerated? Yes, for the best results, you’ll want to keep this dessert refrigerated, just like a standard pecan pie. When covered, it will keep fresh in the fridge for up to 3 days.

Can I freeze this pecan cobbler recipe? You sure can! First, be sure to let it cool completely. Then, make sure it is tightly covered, and keep it in the freezer for up to 2 months.

To Reheat: Be sure to thaw leftovers in the fridge overnight. Then, warm it in the oven at 325° Fahrenheit until the desired temperature is reached.
