This deceptively simple salad is quick to prepare and thoroughly delicious. The dressing is light but adds a distinct punch of flavour that really makes the vegetables shine. The chopped peanuts add a nice layer of extra crunch to every mouthful.
Enjoy!

The carrot and cauliflower salad sounds and looks delicious. I will have to add to my dressings as I do not have, as yet, any Thai ingredients in our house. There is a first time for everything..

I love this twist on these side dishes. It’s something more appetizing than just steamed vegetables on the side.

Yum, I love asian salads, and that dressing sounds fantastic. I would probably do almonds instead of peanuts and snap peas instead of celery, but I can’t wait to try this dressing.

I was very intrigued with the dressing for this carrot and cauliflower salad. Most salad dressings contain more sugar and fat than I think is necessary. This dressing sounds light and delicious. I will have to try it and see for myself. Thank you for this recipe.
