If you skip hand-making the dough (I use flatbread instead of regular pizza crust), they make a great weeknight meal idea to feed your busy family. I like to get creative with the toppings, though, since straight-up pizza sauce, cheese, and pepperoni can get a little bit boring.

I wanted something bold so I decided to make a Goat Cheese Pizza with Sausage, Bacon, and Brussels Sprouts. It turned out better than I could have hoped!

My picky kids even loved it and had multiple pieces. I was not expecting that! And it was SO fast to put together. You are definitely going to want to pin this Brussels sprouts pizza with bacon recipe for later!

I like to try out different sauces for the pizzas we make at home. My boys don’t love red sauce so I try to find alternatives.

One of my favorite local restaurants uses a goat cheese spread on one of their pizzas so I decided to give that a try. I used softened goat cheese, a little bit of cream, some Dijon mustard for taste, and fresh thyme.

I am not a mustard lover but it added the perfect tang without any gross mustard flavor. It was PERFECT for Brussels sprouts pizza with bacon and I think that I will be able to modifythis goat cheese base to make other varieties of pizza.

I felt like the pizza was calling out for something green so I used Brussels Sprouts. And I sliced up the sausage in thin coins so they would heat up really quickly.

Don’t skip the thyme. Don’t do it. It’s so good.

Step 1

This is a pretty simple pizza to make even though it’s totally out of the ordinary.

I like to set out my ingredients before I start so I can build my pizza quickly and get it into the oven.

Spread a little bit of the goat cheese spread on your flatbread crust. Make sure to leave a little edge around the whole pizza.

Step 3

Then add the rest of your toppings.

I sprinkled a little bit of parmesan cheese on top of the goat cheese spread, then added the bacon, sausage, Brussels sprouts, and then a generous helping of parmesan cheese. Because cheese is good.

The pizza is baked in a 400-degree oven for about 8 minutes. And it came out looking and smelling SO good!

Sometimes it is really hard being a blogger who writes about food. I wanted to eat this thing up immediately.

These toppings might not be traditional or something you would think to put on a pizza but you really should give this a shot. It’s so tasty!

I have never put sausage on a pizza before. Well, I mean, I have but it was that other kind of sausage. But I really love sausage, this kind.

It’s always great for a fast meal idea.

These Jack Link’s Wild Side Sausages Original Flavor looked really good when I saw them while shopping at Walmart. I decided they would be a good addition to a goat cheese pizza I’d been wanting to make for a while.

The bold flavor of the sausage would go really well with the creamy goat cheese spread that replaces pizza sauce. Plus these are made with premium cuts of beef and pork and have no fillers or MSG so they are a great, quality product.

I knew my meat lovers would love them.

Originally I had wanted to use Jack Link’s Wild Side Sausages Jalapeno Flavor but thought that might be a little too wild for the kids. I’m glad I stuck with Jack Link’s Wild Side Sausages Original Flavor.

They were great on the pizza and then we grilled the rest up and they were delicious on their own!

The sausages are fully cooked so they only need to heat throughwhich makes them super versatile and a great ingredient to have on hand for mid-week meals. Plus they are high in protein which makes them a perfect entree idea.

You can find Jack Link’s Wild Side Sausages in the refrigerated packaged deli section, near the hot dogs, of your Walmart store. Look for Original, Jalapeno, and Cheddar!

  • Although I didn’t on this occasion, I usually let the kids put their own toppings onsince they have such different tastes. They both love parmesan and bacon so those were a given, but giving them the option to build their own pizza means everyone gets exactly what they want.
  • I usually will make a recipe the way I see it in a book or my head and have the kids try it and then we can modify it the next time we make it. This gets them to try new things and new flavor combinations that they might not ultimately want a whole plate of but at least it gets them to branch out a little.

Equipment

Ingredients

  • 1 Flatbread pizza crust
  • 1 package Jack Link's Wild Side Sausages Original Flavor you will only need one sausage (sliced, so plan on grilling the rest for later!)
  • 2 ounces goat cheese softened
  • 1/4 cup heavy cream
  • 1 tsp dijon mustard
  • 1 tsp fresh thyme plus some for sprinkling on top when the pizza is done.
  • 1/2 cup parmesan cheese finely grated
  • 4 slices bacon crumbled
  • 1/2 cup Brussels sprouts leaves
  • 1 tsp olive oil
  • black pepper

Instructions

  • Preheat your oven to 400 degrees.

  • In a small bowl, mix the goat cheese, cream, dijon mustard and fresh thyme.

  • In another small bowl, toss the Brussels sprouts with the olive oil and black pepper.

  • Lay your flatbread on a cookie sheet and spread the goat cheese on with the back of a spoon leaving a border around the edge of the dough.

  • Sprinkle about a TBSP of parmesan over the goat cheese spread.

  • Top the pizza with sausage, bacon and Brussels sprouts.

  • Sprinkle pizza generously with parmesan cheese.

  • Bake for approximately 8 minutes.

  • When you are ready to serve your pizza, sprinkle on a little bit more fresh thyme.

Notes

Serves about 2 if this is your main course. For my family of 4 I served this pizza as a side and served it with the rest of the Jack Link’s Wild Side Sausages Original Flavor (grilled), along with the rest of the package of Brussels sprouts (roasted with a little bit of garlic salt and olive oil). It was delicious!
